Quick Refrigerator Garlic Dill Pickles

12 pickling cucumbers
1 white onion, sliced thin
2 cloves of garlic
6-8 sprigs fresh dill
whole black peppercorns
red pepper flakes
pickling spice
4-6 pint sized canning jars with lids
2 1/4 cups white vinegar
2 1/4 cup water
3 Tbs. Sugar
4 Tbs. Salt
1 Tablespoon pickling salt
Sterilize the Jars: Hot water clean the jars and their lids in either the dishwasher or in a boiling hot-water bath.


Prepare the Cucumbers & Pack the Jars: thoroughly wash the cucumbers and quarter them (spear shaped), trimming the ends so that they fit in the jar leaving 1/4 of space an inch below the rim.

To each jar, add the garlic, onions and dill. Next, pack the jars tightly with the cucumber spears. Sprinkle the red pepper flakes, peppercorns, and pickling spices on top.


Cook the Brine: Combine the vinegar, water, sugar, garlic, and salt in a medium covered saucepan. Bring to a boil over medium-high heat.


Quick Garlic Dill PicklesPickling: Pour the hot bring over the cucumbers.  Seal with lid and put in refrigerator, let sit for at least one week.
