With a little help from a store bought mix, you can create a rich banana bread that is big on flavor.
2 very ripe bananas
1 box of banana bread mix (I prefer Trader Joes)
1 tsp. of ground ginger
1/3 cup of vegetable oil
1/2 cup of white creme de cacao liqueur
1/4 cup of water
2 Tbs. chopped candied ginger
Preheat the oven to 325º. Generously grease the inside of a bread loaf pan and set aside.
In a medium bowl, mash the two peeled bananas with a fork. Add the 2 eggs and mix well. Stir in the boxed bread mix and the ground ginger; mix until combined. Stir in the oil, the liqueur and the water.
Pour batter into the greased pan and bake in the preheated oven for 25 minutes. Remove the loaf and sprinkle the candied ginger on the top of the bread. Put the pan back in the oven and bake for 20 to 30 minutes longer or until a toothpick inserted into the bread comes out clean.
Cool the bread on a wire rack for 5 minutes before removing it from the pan.
Serve the bread warm with spreadable cream cheese.
